I can't wait to try this tasty-sounding chile, it sounds very simple if not quick to make. I discovered this in a little cookbook put together by high school Homemaking teachers from all over California. The title "A Taste of Mexico" was produced in 1997. It's chock full of easy-to-make Mexican recipes — and easy-to-make is the name of my game. If you try it before I do, please review and add any suggestions you may have for improvement. Reviewers comments are, for the most part, helpful and full of great ideas.

Ingredients

  • cups beef or pork, cut into cubes
  • tablespoons cooking oil
  • tablespoons flour
  • teaspoons chili powder
  • large onion, chopped
  • 1 garlic clove, crushed
  • 1/4 teaspoon ground cumin
  • cups water
  • 1 bay leaf
  • salt and pepper
  • Directions

      In a large pot, brown meat in cooking oil.

      Add flour and stir until browned.
    3. 3
      Add next four ingredients, and cook until onion is tender.

      Slowly add water and bring to a boil.
    5. 5
      Reduce heat, add bay leaf and simmer until meat is tender, 2-3 hours.

      Salt and pepper to taste.

      NOTE: This recipe can be used as a filling for burritos.
