Double Choc-Chip Muffins

This is my favourite muffin recipe of all! I eat these muffins all the time and they are quick and easy to make.

SERVES 12 , 12 muffins (change servings and units)

Ingredients

    Preheat oven to 200 C and prepare muffin pan by greasing or fill with paper liners.
  2. 2
    In large bowl mix the eggs, oil, milk and vanilla.
  3. 3
    In smaller bowl mix the flour, sugar, cocoa, baking powder, salt and chocolate chips.
  4. 4
    Combine wet and dry mixtures and fold together gently until just mixed.
  5. 5
    Spoon into prepared pan and sprinkle choc chips of top of each. Bake at 200C for 20 minutes.

    Remove from pan and cool on rack. These are nice sprinkled with extra chocolate chips on top of each muffin before baking.

Made for the Adopt a Joey part of the Aug Aussie/NZ Recipe Swap, these excellent high-rise & cake-like muffins are for the true choc-lover in all of us, star the cocoa flavor & are very easy-to-fix. W/just 1/2 cup sugar for 12 muffins, they are mildly sweet & rely on the choc chips to satisfy the sweet-tooth. I did use the extra choc chips on top & agree w/you that they are a nice add. Thx for sharing this tasty recipe w/us. Yum !

    Very nice and easy recipe indeed! So easy and simple to make and they taste fantastic. I have made these myself and quite often have tasted yours kid, and they are a very good and are a scrumptious muffin!
