Ww Sweet-Hot Marinated Cucumbers 0-Points

Out of a WW cookbook called "In Season" dated 1999. The longer they marinate the hotter their flavor gets. This make-ahead salad transports well for all those outdoor Barbecues. Cooking time is chill time. Hope you enjoy!

Ingredients

  • 1/3 cup red wine vinegar
  • tablespoon sugar
  • 3/4 teaspoon crushed red pepper flakes
  • 1/2 teaspoon salt
  • cups cucumber, peeled and thinly sliced
  • Directions

    1. 1
      Combine first 4 ingredients in a medium bowl; stir well.
    2. 2
      Add cucumber slices; stir well.
    3. 3
      Cover and chill at least 1 hour.

    Thank you Teresa, for reviving something that I used to have often years ago when I lived up in NJ. The diners where I worked had these on the salad bar where they made them fresh daily (and probably still do). They use apple cider vinegar, so I did as well. It's really just a matter of personal preference to vinegars. Thanks so much for posting. ~Bird
