Grilled Salmon With Roasted Corn Relish

Man, we made this the other night and it was FANTASTIC! Delicious! The corn relish is not wholly dissimilar from my famous black beans and corn salsa, but we made it like this, anyways, and it was good!!

Ingredients

  • 4 anaheim chili
  • tablespoon olive oil
  • ears corn, shucked
  • cup diced tomato, roma
  • 1/4 cup fresh cilantro, chopped
  • 1/2 bunch green onion, chopped
  • teaspoon bottled garlic
  • tablespoons lime juice
  • teaspoon salt, divided
  • 1/2 teaspoon black pepper
  • teaspoon cumin
  • teaspoon enchilada seasoning
  • 4 (6 ounce)  salmon fillets
  • cooking spray
  • Directions

    1. 1
      Heat grill and spray down with cooking spray. Place corn and chilies on grill. Grill chilies for five minutes or until nice and brown; let cool, peel, de-seed, and dice. Grill corn for ten minutes or until done. Cool and cut kernels from cob.

      Mix corn and chilies in a bowl. Add the tomato, cilantro, onion, garlic, and juice. Toss gently and add 1/2 tsp salt and 1/4 tsp pepper.

      Baste salmon with olive oil (very, very lightly). Combine remainng salt and pepper with cumin and enchiladia seasoning. Rub spice mixture over salmon and put on grill (coated with cooking spray). Grill 4 minutes each side or until desired doneness (or fish flakes easily with fork).

      Serve with relish and enjoy!
