Grilled Tri-Tip Roast With Tequila Marinade

Ingredients

  • 1/2 cup fresh lime juice
  • 1/2 cup chopped fresh cilantro
  • 1/2 cup olive oil
  • 1/3 cup soy sauce
  • 1/4 cup tequila
  • 7 garlic clove, finely chopped
  • teaspoons lime zest
  • teaspoons ground cumin
  • teaspoons dried oregano
  • teaspoon ground black pepper
  • lbs beef loin tri-tip roast, trimmed
  • Directions

    1. 1
      Whisk first 10 ingredients in medium bowl. Using small sharp knife, pierce meat all over.
    2. 2
      Place meat in large resealable plastic bag; add marinade. Seal bag. Refrigerate at least 2 hours or overnight, turning plastic bag occasionally.

      Prepare barbecue (medium-high heat). Remove meat from marinade. Discard marinade.

      Grill meat to desired doneness, about 10 minutes per side for medium-rare. Transfer to cutting board.

      Tent with foil; let stand 10 minutes. Cut diagonally across grain.

    This was an excellent roast! So full of flavour and I only had time to marinate it for about 3 hours. Next time will definitely give it the overnight treatment. Did it on the BBQ and it took about 1 and a 1/2 hours and just kept turning it every 10 to 15 minutes. It could easily be done in the oven and make a very tasty gravy but the bbq is great - seals in the juices & flavour. Thanks for sharing!
