During the summer our family eats a lot of salads. I love how refreshing they are and the fact that they are healthy doesn't hurt either. This salad is a meal in itself or could be used as a side dish.

This is yummy! I used some mixes veggies (broccoli, yellow squash, snow peas and carrot) because I had them in the fridge. For the dressing I used a 50/50 mix of low fat mayo and fat free sour cream to trim the fat with Italian herb mix and used it lightly. Loved the addition of the mustard!. This is a great light lunch and will be a wonderful summer side for sandwich's and goodies off the grill. Thanks Gert. Made for Photo Tag

This is awesome! You get a nice crunchy texture with veggies while having the soft smoothness of the pasta. Excellent blend of flavors. I highly recommend this dish. I cut the recipe in half and made it for our lunch yesterday. I have plenty of leftovers. Makes huge servings. You could easily make this for a side dish for a large crowd. Thanks gertc for posting.
