"It's also great with toasted bread rounds," Cheryl said. She uses the salsa when she makes quesadillas. "I make it a lot," she said. The recipe also is easy to make and doubles well to serve a crowd. For additional flavor, Cheryl gently tosses the chopped vegetables with olive oil, vinegar and a packet of Italian dressing. The fresh colors and flavor are the essence of summer, she said. "I love it."
