SERVES 4 , 8 castles (change servings and units)

    place eight of tomato slices on a serving plate.
  2. 2
    top each slice with a slice of cheese, then a couple of slices of avocado and red onion.
  3. 3
    Build up the layers until are the first 4 ingedients are used up.
  4. 4
    Combine the last 7 ingredients for the dressing and mix well.
  5. 5
    Drizzle the dressing over the tomato castles.
