Tofu, Apple, Almond Pita Pocket

This was inspired by Chunky Apple and Almond Chicken Salad, a recipe by M&A's, one of my Spring 08 Pick-A-Chef adoptees. I use Basic Marinaded and Baked Tofu for the tofu.

SERVES 4 (change servings and units)

Directions

    Cut up the apple and place into bowl.

    Add lemon juice and stir to coat.
  3. 3
    Add remaining ingredients and combine.
  4. 4
    Serve in pita pockets.
