Creme Fraiche (Substitute)

Creme Fraiche is a thick tangy French cream similar to sour cream, however it is smoother and richer. It's thickness comes from natural bacteria in unpasteurized cream. But since this is an unpasteurized process, in the United States we have to improvise by using the natural fermenting agents in buttermilk. This can be used in recipes since it does not break when heated, unlike sour cream. Or you can use it to top fresh fruit. From Cuisine at Home. Cook time is actually time it just needs to sit to thicken.

Mix heavy cream, buttermilk, and lemon juice.2
Cover and let sit at room temperature 6 - 8 hours, then refrigerate. Use when thick.

I left my bowl on the counter from midnight to about 7:30 the next morning and than refrigerated. A very nice creamy sour cream type flavor without the extra "bite" that sour cream has. This did thicken but I did have more of a pourable consistency. I am very happy with the results and tasted so good with fresh strawberries. I used KC_Cooker's Substitute for Buttermilk for this recipe. Thank you cookiedog!!
