Microwave Rice Pudding

My wife ran an daycare in our home. This is ome of the kid meals they gave us to help with meal planning. The servings are kid size, but it should be easy to ramp it up to adult portions if needed. You can use cooked regular rice instead of minute rice.

Ingredients

  • 1/2 cup milk
  • 1/4 cup raisins
  • 1 egg
  • 1/4 teaspoon cinnamon
  • 1/2 cup Minute Rice
  • Directions

    1. 1
      Spray a cereal bowl with non-stick cooking spray.
    2. 2
      Mix together milk and egg.
    3. 3
      Add rice, rasins and cinnamon and stir together.
    4. 4
      Microwave on high for 3 min (if you don't have turntable in your microwave cook on high for 2 min, rotate the bowl and cook another min on high).

    It was easy and tasty, but I'd like to make it creamier. It was kind of grainy in texture, like plain rice with sweet flavors instead of pudding.
