Superfuel Bars

Almost like a powerbar, but better. Easy, nutritious, and they don't even taste "good for you" (all in moderation, of course!) You'll never do store-bought again... courtesy of a friend who got it through a friend.... I am considering mixing in some cacao nibs next time for a little extra mmmmmm Cooking time = refrigeration time

Ingredients

  • cups almond (raw)
  • 1/2 cup flax seed meal (flax seeds ground in a blender)
  • 1/2 cup shredded coconut (unsweetened)
  • 1/2 cup unsalted almond butter (roasted tastes better)
  • 1/2 teaspoon celtic sea salt
  • 1/2 cup coconut oil
  • drops stevia
  • tablespoon agave nectar
  • tablespoon vanilla extract
  • cup chocolate chips
  • Directions

    1. 1
      Place almonds, flax meal, shredded coconut, almond butter and salt in a food processor and pulse about 10 seconds.

      In a small sauce pan, melt coconut oil over very low heat. Remove from heat and add stevia, agave and vanilla into oil.

      Add coconut oil mixture to food processor and pulse until ingredients form a coarse paste.

      Press mixture into an 8 x 8 glass baking dish, chilling in refrigerator until mixture hardens.

      Over a double boiler, in a suacepan, or in the microwave, melt chocolate. Spread over bars and refrigerate until chocolate hardens.
