Fluffy Scrambled Eggs - Lightened up a Bit

This recipe was inspired by tips from both Kittencal and PaulaG. Kittencal came up with the idea of adding baking powder to scrambled eggs to make them fluffy, and PaulaG passed on a tip about using non-fat or low-fat evaporated milk in place of whipping cream in certain recipes. Thanks to both of these great chefs!

SERVES 2 (change servings and units)

Ingredients

Directions

    Whisk ingredients until well incorporated. Let sit 5 minutes.
  2. 2
    Meanwhile, heat heavy non-stick pan over medium-high heat, then spray with butter-flavored cooking oil.
  3. 3
    Pour eggs into heated pan and cook, stirring and lifting with non-stick spatula throughout.
  4. 4
    Turn heat off before eggs reach desired consistency and transfer to heated plates. Eggs will continue to cook a little after removed from pan.

These were so good.... I was hesitant about the baking powder at first but they turned out great and so fluffy.... I cooked them with diced up ham and some shredded cheese.... They were loved and I'll be fixing them this way from now on... Made for photo tag 2008...

    I would never have thought of putting a little baking powder in scrambled eggs to make them fluffier. The eggs turned out perfect. They were nice and fluffy and tasted great. Next time I am going to some diced ham and shredded cheese. Thanks for another great recipe, puppitypup. Made for May, 2008 Bevy Tag.

    This is exactly the way to make scrambled eggs! I also took Kittencal's idea and started to add baking powder and what a difference but I always used evaporated milk and some times a little velveeta cheese in them, so I continued withthose ingredients also. Great recipe! Thanks for posting.
