Coconut Chicken and Pineapple Skewers

Posted for the May 2008 "Let's Get Skewered" Game in the Asian Forum. From Epicurious. This can be made with shrimp instead of chicken, and mango may be substituted for the pineapple. Time does not include soaking skewers or marinating.

Ingredients

  • 2 (1/2 lb)  boneless skinless chicken breasts (about 1 lb)
  • 2 garlic clove, chopped
  • 1 shallot, chopped
  • tablespoons fresh ginger, chopped
  • 1/2 cup fresh cilantro
  • teaspoon salt
  • teaspoons cumin
  • tablespoons peanut oil
  • 1 lime, juice of
  • ounces unsweetened coconut milk
  • 1/2 fresh pineapple (20 3/4-inch cubes)
  • Directions

      Soak bamboo skewers in water for at least 30 minutes.

      Cut chicken into 3/4-inch cubes and place in a bowl.

      Place garlic, shallot, ginger, cilantro, salt, cumin, peanut oil, lime juice and coconut milk in processor or blender. Puree until smooth liquid forms.

      Pour marinade over chicken and refrigerate for at least 30 minutes or up to 3 hours, turning occasionally.

      Preheat grill to medium. Add marinated chicken cube then pineapple cube then another marinated chicken cube to each bamboo skewer. Grill until chicken is slightly golden all over, turning as needed (about 5 minutes each side).

    These are delicious and the coconut cream was neither overpowering with the blend of flavors balancing each other out just right. The addition of pineapples with it are just terrific and I ate it as is along with the other skewers. Mmmmmmmm. Thanks, Jen Rickmann! Made and reviewed for Asia's Let's Get Skewered Tag game 2008.

    These were a tropical paradise on a stick! I served them with coconut rice and it was the perfect compliment. The marinade was so good I couldn't bare to through it away so I put it in a sauce pan and cooked it a little then added some more coconut milk, a little chicken broth and some water and boiled it for about 15 minutes until it made a nice sauce. As it turns out, the chicken was so flavorful it didn't even need it! These would make great appetizers too!
