Strawberry Ooey Gooey Butter Cake

Paula Deen has really popularized the Ooey Gooey Cake; and, by golly, she has come up with another one, just right for spring and summer. Ooey gooey cakes, in case you are wondering, are a layer of crusty, chewy cake mix, covered with a rich, almost custard-like filling. Mmmm.

Preheat oven to 350 degrees F. Lightly grease a 13- x 9-inch baking pan.2
In a large bowl, combine cake mix, butter, and 1 egg. Press mixture into bottom of prepared pan.3
In a separate large bowl, beat cream cheese and 3 eggs at medium speed with an electric mixer until smooth. Gradually beat in confectioners' sugar until combined. Stir in strawberries.4
Spoon mixture over cake mixture; bake for 35 to 40 minutes or until center is set.5
Cool completely; cut into squares to serve. Garnish with a dollop of sweetened whipped cream and strawberries, if desired.

OUTSTANDING! Really enjoyed making & sampling this cake! Sampled it only, 'cause my partner took most of it off to his work where it was devoured in short time! Definitely have to make this again when I can eat much of it myself! Strawberry cake, cream cheese & fresh strawberries ~ A great combo!! Now I'll have to be on the lookout for other Ooey gooey cakes!! Thanks for sharing! [Made & reviewed as a kidnapped recipe in the Aus/NZ Recipe Swap #16]
