Caroline's Cucumber, Spinach Salsa

Since finding out that regular salsa has many ingredients I can't have, I decided to make up something that I could and came up with this. It has an interesting flavor and is a great substitute for regular salsa.

SERVES 6 (change servings and units)

    very finely chop the first 5 ingredients making sure to drain off excess liquid, add garlic, lime juice, red pepper and salt and stir to combine. Put in refrigerator for 4 hours to let flavors combine. Serve with corn chips or use in place of regular salsa in other recipes.
