A must for cool people - or those who like cucumbers! This is a very versatile sandwich spread or dip, which is so easy to whip up at the last minute; it makes VERY elegant sandwiches and is a wonderful accompaniment for smoked salmon, prawns (shrimp) or tuna. I have also used it to spread on savoury scones and crackers. If you plan to make this a day before you need to use it, you might like to salt the cucumbers first - as they do release water into the spread.

SERVES 8 , 8 Rounds Sandwiches (change servings and units)

    Allow the cream cheese to come to room temperature for about 10 to 15 minutes, to soften it slightly.
  2. 2
    Add all the ingredients, EXCEPT the cucumber, and mix thoroughly. Season to taste with salt and pepper, then add the diced cucumber and gently fold through the mixture.Check the seasoning once more.

    Serve as a sandwich spread or as a dip for crudites; also wonderful with crackers and scones. This spread is deleicious when served with smoked salmon and blinis.

    Store in an airtight container in the fridge for up to 2 days.

Loved it! I served this as a dip with veggies from my garden and a nice baguette. Everybody loved it. I didn't have mint on hand so I just omitted it. It was still delicious! Thanks for the recipe.

    I do enjoy trying your recipes, & this one is no exception ~ refreshingly cool, tasty & so easy to make! Spread it on a piece of sourdough bread, & that was very nice! Then, I had it on a piece of fresh, dense, multigrain bread, & that was even better! Will certainly be keeping this recipe around! [Made & reviewed as a bonus tag for one of my teammates in the Aus/NZ Recipe Swap #16]

    I must be cool, because cucumbers are one of my top 10 foods of all time. When I saw this recipe; I thought, "I MUST make this for my lunch and save some for Dennis later on". It had already been a long day, and I just wanted something Cool to eat, so I was drawn to the recipe, as I know I will never be let down. Before going to the barn in the afternoon, I quickly chopped the cucumber, salted them, and put them in a colander to drain. I took out the cream cheese and put on the counter. In the greenhouse I have beautiful chives and small green onions growing so I don't know how I could of been more set. I even had a homemade loaf of bread that was very crusty on the outside but soft on the inside. Perfect! Upon returning home, I squeezed the cucumber juice out mixed up and folded them in the cream cheese and went off to sit down for a moment. I couldn't stand it a moment longer, so I flew back to the fridge and blasted my bread with a good helping of chive and cucumber spread and I was in heaven. This was so perfect, I couldn't think of anything that would make me happier. Thank you FT! Made for Spring Spectacular April 2008
