2bleu's Lemony Rice With Peas

This sidedish is a light, refreshing, and a wonderful accompiniment to broiled fish or meat. It is also a great use of leftovers. You can vary the nuts from walnuts, to pecans, pine nuts or even sunflower seeds. This dish is our version of Risi E Bisi (rice with peas). Enjoy.

Ingredients

  • tablespoons butter
  • tablespoon extra-virgin olive oil
  • 6 green onion, thinly sliced
  • cups rice, cooked
  • cup peas, cooked (frozen or shelled fresh)
  • 2 lemon, juice and zest of
  • tablespoons fresh parsley, chopped
  • salt, to taste
  • black pepper, to taste
  • tablespoons walnut, toasted and chopped fine (optional)
  • Directions

    1. 1
      Heat butter and oil in large nonstick skillet over medium-high heat. Add all but 2 tablespoons green onions; sauté 30 seconds.

      Add rice and sauté until heated through, about 4 minutes.
    3. 3
      Add peas, lemon juice, zest, parsley, and salt and pepper. Sauté 2 minutes to blend flavors.

      Garnish with remaining green onions and optional chopped walnuts and serve immediately.

    it was a little too much lemon, so with the leftovers i added a little goat cheese. That made it a little more savory and a meal in itself!!

    Amazingly good! The walnuts were a really nice addition, I recommend including them. Although I ended up using juice and zest of 1 1/2 lemons, I think 2 would have been better (as per chef's recommendation). Otherwise, I cooked the rice in vegetable broth and lowered the butter and oil to 1 teaspoon each and added some dill (mmm). I did overcook the peas a bit (forgot to lower the cooking time for 1 cup of frozen peas) so they came out a bit wrinkled. This of course was not the recipe's fault. My BF is a huge fan of rice and peas (risi e bisi) so I figured he'd love this recipe, and so he did! Will definitely be making this again, it's a winner!
