Apple and Peanut Butter Sandwich

I'm trying to eat less carbs and I often have this sandwich for breakfast. Its flavourful, light, crunchy and so simple to make. I find it filling so I don't want to eat much else. I like to use a sweet apple on top of the sandwich and sprinkle it with a pinch of pumpkin or apple pie spice, cinnamon or nutmeg over the apples. You could add whatever spice you like to add to apples.

This was an interesting flavor combination!! I don't think I toasted my bread long enough, so the inside was still "chewy," which I just found a tad weird with the crispy apple... I used low-carb country bread and a Gala apple, and only realized after I had finished it that I had completely forgotten about the spice!! If I remember it next time, I will edit my review to reflect that... but it was nice even without it. Thanks for posting! UPDATED — I tried it with a Jazz apple and some cinnamon sprinkled on top... it was wonderful as well!
