A fresh, light-tasting, easy-to-prepare salad. I already had everything in the house I needed to make it. I like this type of recipe because it's easy to tweak to individual tastes (more scallions, fewer carrots, etc.). I liked extra dressing on mine. I would have liked the dressing to be a little bolder (I like strong flavors in dressings), but I am not sure what I could have added or omitted to achieve that. Maybe next time a bit less oil or juice will do the trick for my taste. Thanks for a simple, yummy lunch!
