Key Lime Pie

Really good key lime pie. Nice and tangy, not too sweet! Use fresh key limes... makes a real difference in the flavor.

Ingredients

  • 4 egg yolk
  • teaspoons key lime zest
  • 1/2 cup key lime juice
  • 1 (14 ounce) can sweetened condensed milk
  • 1 graham cracker crust
  • Directions

      preheat oven to 340 degrees.

      Wisk together yolks and zest.
    3. 3
      Beat in milk, beat for a minute or two.
    4. 4
      Beat in lime juice 1/2 at a time.
    5. 5
      Let mixture sit to thicken up.
    6. 6
      Pour into prepared crust.
    7. 7
      Bake for 15 minutes.
    8. 8
      Let cool to room temp, then refrigerate for several hours before serving.

      If you are using a deep pie shell, double the recipe and bake for an additional 5 minutes.
