These are my family's favourite macaroon. Always a constant on holiday platters. I guessed at the amount, because I usually combine large and small cookies when I bake.

SERVES 24 (change servings and units)

Ingredients

Directions

  1. 1
    Preheat oven to 325 degrees.
  2. 2
Line cookie sheet with parchment paper. Do not just grease sheet as they will stick. Yes, that is experience. lol.
  3. 3
Mix all ingredients together until well combined.
  4. 4
Depending on the size you make them, either use a spoon or an ice cream scoop, and place on sheets.
  5. 5
    Bake for 10 - 12 minutes.
  6. 6
When baked, transfer to cooling racks.
  7. 7
    These freeze wonderfully.

Yummm! I LOVE coconut and the simplicity of these macaroons are amazing. So easy, with such a great flavor. I will be adding these sweet morsels to my holiday cookie trays this year. Thanks for posting luvcook'n.

THESE ARE SOOO GOOD!!! I can't believe how utterly scrumptious these were with ony three ingredients! My sister who doesnt even like coconut ate one of these and was like "OOOOHHHH" and my mom said "These are amazing!" I have to agree--perfect. I highly recommend these to anyone searching for a macaroon recipe not only that is easy, but is also amazing in taste, texture, and appearance. Thank you chef!

Wow! These are EXCELLENT! I found scooping them to be a challenge until I started scooping with a large spoon and using my fingers to slide it onto the cookie sheet. Mine were all about the same size (slightly bigger than 2") and I got 42 out of this recipe. I love the flavour of these. They have a sweet/toasty flavour to them. Perfect. I know that I will be making these again and again. I used low-fat condensed milk to make them a wee bit healthier and it worked perfectly. Thank you so much for posting such a wonderful recipe!
