Ingredients

  • 2 cups whole wheat pastry flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 egg, beaten
  • 3/4 cup orange juice
  • 1/4 cup canola oil
  • 1/3 cup honey
  • 1/2 teaspoon vanilla extract
  • 1/4 cup golden raisin
  • 1 tablespoon orange zest

    • Directions

      Combine dry ingredients in a large bowl; stir in combined remaining ingredients, mixing until just blended.

      Pour batter into greased muffin tins; filling about 1/2 full.

      Bake at 350 until muffins are browned, about 20 minutes.
