Green Beans with Peanut Dressing

One of the only ways I like green beans! This comes from Japanese Home Style Cooking, a book given to me by a girl who lived with us. Prep time includes allowing the beans to stand in the soy sauce.

SERVES 4 (change servings and units)

Ingredients

PEANUT DRESSING

Directions

    String the beans and cook uncovered in plenty of boiling water until they turn bright green.
  2. 2
    Do not overcook.
  3. 3
    Drain, spread out to cool.
  4. 4
    Cut diagonally into 1 inch (2cm) lengths.
  5. 5
    Sprinkle half a teaspoon soy sauce over the beans and stand for 10 minutes.

    Mix the beans into the dressing and serve.
  7. 7
    DRESSING: Mix the peanut butter, sugar, soy sauce and dashi well.

    I made this a main dish by adding some cubes of fried tofu (prepared per Pan-Fried Tofu with Spicy Peanut Sauce, Pan-Fried Tofu with Spicy Peanut Sauce). We loved it! We added a few sprinkles of pepper flakes because they were so good in the sauce in the aforementioned recipe. The dashi really makes this excellent and it pairs surprisingly well with the fresh flavor of the green beans. We served over medium-grain brown rice. Wonderful flavor to the rich, savory peanut sauce.

    Mmm, nice. I used cashew butter, since I can't eat peanuts, and the results were great — a very rich creamy dressing that complemented the green beans perfectly.
