I got this recipe from my mom over a few months ago, and I have made additions to it. It's delicious! Serve over cooked white rice.

Ingredients

  • lb boneless skinless chicken breast, cut into thin strips
  • 3 garlic clove, minced
  • chinese bean threads, cooked and drained
  • teaspoons vegetable oil, divided
  • tablespoons soy sauce
  • tablespoons dry sherry or cold water
  • 1/2 cup frozen peas, thawed or 1 cup frozen snow peas, thawed
  • small onion, sliced very thin
  • 2 fresh carrot, sliced very thin
  • 1 celery, sliced very thin
  • teaspoon black pepper
  • dash Accent seasoning, more if desired
  • 1 lemon, wedged
  • Directions

      Toss chicken and garlic in medium bowl.

      Heat 1 teaspoon vegetable oil in wok or large nonstick skillet over medium-high heat. Add chicken mixture, stir-fry 3 minutes or until chicken is no longer pink. transfer to medium bowl, toss with soy sauce, sherry, pepper and accent seasoning.

      Heat remaining 1 teaspoon vegetable oil in wok. Add snow peas, stir-fr 1 minute. Add onions, carrots and celery, stir-fry 30 seconds.

      Add chicken mixture, stir-fry 1 minute.

      Add bean threads to wok, stir-fry 2 minutes or until heated through. Garnish with lemon juice if desired.
