Fudgy Mocha-Toffee Brownies

These brownies are very rich and moist. They have a great chocolate taste, but are more chocolatey then they are sweet. Next time I try them I might use milk chocolate chips just to add a little more sweetness. These brownies are great for that chocolate fix and the coffee flavor gives them their own unique taste. Enjoy!

Ingredients

  • tablespoons instant coffee granules
  • 1/4 cup hot water
  • 1/4 cup butter
  • 1/4 cup semi-sweet chocolate chips
  • 1 1/2 cups flour
  • 1 1/3 cups sugar
  • 1/2 cup unsweetened cocoa
  • teaspoon baking powder
  • 1/2 teaspoon salt
  • teaspoon vanilla extract
  • large egg
  • 1/4 cup toffee pieces
  • Directions

      Preheat oven to 350 degrees.

      Coat bottom of a 9-inch square baking pan with cooking spray.

      Combine coffee granules and 1/4 cup hot water, stirring until the coffee granules dissolve.

      Combine butter and semisweet chocolate chips in a small microwave-safe bowl. Microwave at HIGH for 1 minute or until butter melts; stir until chocolate is smooth.

      Lightly spoon flour into dry measuring-cups; level with a knife. Combine flour, sugar, unsweetened cocoa, baking powder, and salt in large bowl, stirring with whisk.

      Combine coffee mixture, butter mixture, vanilla extract, and eggs in medium bowl, stirring with a whisk.

      Add coffee mixture to flour mixture; stir just until combined.

      Spread evenly into prepared pan. Sprinkle evenly with toffee chips.

      Bake a 350 degrees for 22 minutes.

      Cool on a wire rack.

    I am going to have to give you 5 stars for this one. Excellent brownies!!! I did do a couple of things different I used milk chocolate chips and whole wheat flour. I also ended up baking mine for 31 minutes, which turned out to be to long as they got kind of cakey. Next time I will have to follow the recipe and bake them for the time stated 22 minutes. I just always poke mine with a toothpick and if it sticks they are not done, but I think this recipe is meant to fudgy as the title states. We will be making these again. Thanks for the recipe.
