Herb-Coated Cod

A very simple but yummy way to prepare cod. The buttery flavor has saved more than one meal of frozen cod at our house. I thank Harriet Stichter of Milford, IN for submitting this to TOH, as it appears in the TOH cookbook.

SERVES 4 (change servings and units)

    Preheat oven to 400 degrees Fahrenheit. Grease a 13-inch x 9-inch x 2-inch baking dish.
  2. 2
    Crush butter-flavored crackers either in a Ziploc bag with a rolling pin or bottle of sherry, or in a food processor.
  3. 3
    Melt butter over low heat, and place in a shallow bowl.
  4. 4
    In another bowl, combine the crackers, cheese and seasonings.
  5. 5
    Dip fillets in butter, then coat with crumbs.
  6. 6
    Place coated cod fillets in baking dish. Bake, uncovered, at 400 degrees Fahrenheit for 15-20 minutes or until fish flakes easily with a fork.

    Wow... Purchased cod on sale last night and didn't know what to do with it. This recipe is fairly simple, QUICK, and taste wonderful. Best fish recipe I've found in years. Thanks!

    My husband called to say he was bringing home some fresh caught cod, so I immediately went to the Zaar for help. This recipe sounded great and I used the Pepperidge Farm's butter crackers as suggested. This has become my favorite recipe thus far for fish. My daughter who normally turns her nose up at fish tried it and loved it. The flavors really compliment the fish! I even managed to get some photos before it was devoured! LOL! Thanks Katel!
