Put beet in microwave safe dish (cover with several layers of paper towel) and microwave on HIGH for 8-10 minutes.2
Let cool and rub off skin; slice into about 15 pieces.3
Toss beets with peach.4
Drizzle vinegar overtop.5
Enjoy!
