Peanut Butter Bars

These are amazing and delicious bar cookies. I always get SO many compliments when I make these. Be careful, they go FAST, despite the fact that this recipe makes so many!

Ingredients

  • cup butter
  • cup sugar
  • cup brown sugar
  • 2/3 cup peanut butter (I use creamy)
  • 2 egg
  • teaspoon vanilla
  • cups flour
  • cups oats (old fashioned or quick cooking)
  • teaspoon baking soda
  • 1/2 teaspoon salt
  • Frosting

    Directions

      1. Cream butter and sugars.

      2. Mix in peanut butter, eggs and vanilla.
    3. 3
      3. In a separate bowl combine flour, oats, baking soda and salt.

      4. Combine two mixtures together.

      5. Press evenly into a 15x10x2 cookie sheet (jelly roll pan).

      6. Bake at 350 degrees for 15-18 minutes (till golden brown).

      7. Mix the frosting ingredients together.

      8. Spread the frosting over the warm bars.

      Occasionally the frosting will be a little hard to spread. When this happens, I add either milk, or I microwave the frosting for 10-20 seconds and it is alot easier to work with.

    Wow! I've tried out a couple of peanut butter bar recipes and this one is the best, by far. They're chewy but not too peanutty and the chocolate frosting is just perfect.

    Thanks for a great recipe! I love that they are made with stuff I usually have on hand. The bars are soft and not too sweet. I was afraid there would be enough of the frosting when I started spreading it, but a thin layer is plenty, as it is pretty sweet. Even my non-chocolate liking DD enjoyed these.
