Baked Bluefish in Wine

From Pingry Cooks submitted by Marian Kaufman. Here for when I get bluefish!

SERVES 4 -6 (change servings and units)

Ingredients

Directions

    Preheat oven to 375 degrees F.
  2. 2
    Arrange layer of sliced onions and tomatoes in shallow baking dish.
  3. 3
    Season with salt, pepper, oregano and parsley.
  4. 4
    Salt and pepper the fish and place on top.
  5. 5
    Pour the wine over the whole thing and cover tightly with foil.
  6. 6
    Bake 50 minutes at 375 degrees until fish flakes.
  7. 7
    Remove fish to warm platter.
  8. 8
    Stir sour cream into the onion and tomatoes and reheat, but don't boil.
  9. 9
    Spoon around the fish and serve.
