Got this recipe off a recipe card from Publix. Absolutely delicious! Great served over top of white rice.

SERVES 2 (change servings and units)

Ingredients

Directions

    Chop pineapple into small pieces.
  2. 2
    Combine with salsa, cornstarch, horseradish and honey mustard.
  3. 3
    Coat both sides of fish with cooking spray.
  4. 4
    Sprinkle fish evenly with lemon pepper.
  5. 5
    Preheat large saute pan on medium-high.
  6. 6
    Cook fish 3 minutes; turn.
  7. 7
    Add salsa to one side of the pan & stir often to evenly heat.
  8. 8
    Reduce heat to medium, and simmer 5-6 minutes or until flesh is opaque & separates easily with a fork.

    Serve fish and sauce over prepared long grain rice.

My mom and I both really liked this dish. My husband was not to crazy about it but he is not a bigh fish person. I would make it again. Very quick and easy.

    The lemon pepper wasn't included in the recipe, but I just added it to the salsa mix. It was absolutely delicious! I'm making this one again.
