It's just something for smaller portions. I like it because it's very filling and it's easy enough to do quickly.

SERVES 12 , 12 Mini Meatloaf Muffins (change servings and units)

Directions

    Preheat oven to 350 degrees.

    Mix all ingredients together.

    Separate into 12 parts and place in muffin cups.

    Bake for 30-40 minutes.

    Loved these little meat muffins! Very flavorful, so easy to make - meat and veggies all in one - just toss together a salad and you've got a great quick meal. Terrific - thanks for posting!

    This meatloaf was very flavorful, and we liked the addition of extra veggies in it. They were cute and the perfect portion sizes too. Thanks! Made for Spring PAC 2008.

    Made these for a couple of neighbors I've been cooking/baking for this past month (keeping one for myself ~ taste test, you know!), & let me telll you, this recipe makes some very tasty meatloaf! The zucchini, which I cubed fine (almost minced) added a nice change for me, as did the cheeses! Definitely a keeper! Thanks for sharing! [Made & reviewed for one of my adoptees in this Spring's Pick-A-Chef]
