This is my grandma's recipe. It's so quick and easy to make. It goes just perfect with any Chinese dish you may be making.

SERVES 6 (change servings and units)

Ingredients

  • 2 tablespoons oil (Sesame works best)
  • 1 tablespoon butter
  • 1/4 cup green pepper (chopped)
  • 1/8 cup green onion (chopped)
  • 3 eggs
  • 1/4 cup soy sauce
  • 2 cups white rice (Just a little undercooked, I use "minute rice" and cook it in 2 cups of water for 4 minutes in the m)

Directions

  1. 1
In a wok or frying pan heat oil and butter until very hot.
  2. 2
Add peppers and chives and cook for about 2 to 3 minutes.
  3. 3
Add eggs and cook like scrambled eggs.
  4. 4
Add rice and soy sauce and cook, moving rice around constantly until done (About 2 minutes).
  5. 5
You can also add some black pepper if you like.
  6. 6
Serve right away or keep warm until serving.

Simple to make and versatile. I doubled the onions and added garlic for more flavor. I used the suggested sesame oil, and I agree, that's the best choice of oil. I tossed in some broccoli to make an all-in-one side dish for Grilled Chinese Pork Chops . I would use red bell pepper next time for some extra color. Thanx for sharing!

Quick and easy fried rice recipe! I used jasmine rice and a red pepper in place of the green. Made for the Babes of ZWT4.
