Sweet & Nutty Tuna Salad

Ingredients

• 3 (6 ounce) cans albacore tuna
• 2 green onions, minced
• 1 stalk celery, finely diced
• 1/2 lemon, juice of
• 2 tablespoons sweet relish
• 1/2-3/4 cup mayonnaise
• 1/4 teaspoon salt
• lemon pepper
• 1/4 cup unsalted cashews, crushed
• 1/4 cup dried cranberries (ie Craisins)

Directions

   Drain and squeeze tuna to remove all excess water.

   Combine all ingredients in a medium size bowl and add more seasoning, mayo, nuts, and cranberries to your liking.

   Cover and refrigerate for at least 2 hours so flavors can meld.
