Red Snapper Scallops

Ingredients

  • 250 g red snapper fillet
  • teaspoons canola oil
  • tablespoon dry white wine
  • tablespoon water
  • 1 lime, cut in wedges
  • tablespoon parsley, minced
  • Directions

    1. 1
      Cut snapper into scallops, approximately 2 inch cubes.
    2. 2
      Saute for 2 minutes in hot oil.
    3. 3
      Add wine and water, cover and cook approx 10 minutes until fish is opaque.
    4. 4
      Squeeze 1/2 of the lime and sprinkle the parsly over the fish; heat 1 minute longer.

      Place on serving dish and garnish with remaining lime.
