Ingredients

  • 1 1/2 teaspoons olive oil
  • lb zucchini, thinly sliced
  • 1/4 cup golden raisin
  • tablespoons chopped fresh mint
  • 1/4 teaspoon salt
  • pepper
  • Directions

      In a large nonstick skillet heat oil to medium high. Add zucchini and cook, stirring often, until crisp-tender, about 5 minutes.

      Add raisins, mint, salt and pepper. Toss to combine and serve.
