Sure Peach Pound Cake

This peach pound cake recipe uses peach jam to add to the flavor. Be sue to start this in a COLD oven.

Ingredients

  • 1/2 cup shortening
  • 1/2 lb butter
  • 1 3/4 cups sugar
  • 6 egg
  • teaspoon baking powder
  • cups cake flour
  • 1/4 cup milk
  • teaspoon vanilla
  • 3/4 cup peach jam
  • Directions

    1. 1
      Cream shortening, butter and sugar. Add eggs, one at a time, beating well after each addition.
    2. 2
      Add baking powder to flour and add alternately with milk and vanilla to the mixture. Add peach jam and blend well.

      Pour into a greased and floured 10 inch tube pan.

      PUT IN A COLD OVEN.

      Bake at 325 degrees for 1 1/2 hours.

    This was the cake that my mom wanted for her birthday!She thought that it was really moist and good.I could not find the peach jam a the store so I got perserves.I added a cup.They melted into the cake just fine.Around the top of the cake there were some peices that did not melt though.I think that it added someting to the cake.Next time ,that I make the cake I think that I might add either some fresh peaches or some frozen peaches to it.That way it will have some peices if peach in the cake.It was simple to make and very good.I think the fact that it was not to sweet was a major plus.That way you could make it into a shortcake or put a whipped topping on it.I will make this one often!Thanks for a great cake!!
