This recipe is from Cooking With Mickey Volume II. It is served at Disney--MGM Studios Theme Park. Makes a wonderful vegetable dish freshly cooked or leftovers are delicious served cold the next day.

SERVES 4 -6 (change servings and units)

Directions

    Steam the vegetables for 5 to 6 minutes or until partially cooked, set aside.
  2. 2
    Melt the butter in a skillet, add steamed vegetables and cilantro; quickly saute until almost tender.
  3. 3
    Sprinkle with salt and pepper and serve immediately. The vegetables should remain slightly crunchy for best flavor.

A very good little recipe! Nice color and variety of veggies, but a bit bland for my tastes--this needed something to give it a bit of zing. The Peanut Gallery suggested a few zings such as seasoned salt (easy), garlic salt, hollandaise sauce. The leftovers we used the next day for lunch, with a handful of orzo pasta and a few shrimp along with a shake of red pepper flakes and garlic (minced). YumO!
