Fantastic salmon! I wanted a healthy meal that I could use fresh dill from my garden in and this was a great one! I used 2t olive oil and 1T butter total to save a few calories. Didn't have a shallot so I used finely chopped red onion which I thought was just perfect! The salmon I used was wild caught salmon and I used chardonnay wine. My broiler managed to get to 600 degree's while I was prepping the onion, dill and salmon, therefore, I only needed to do it three and a half minutes per side - I flipped my salmon half way through and it was done just right. I think the cucumber is an optional ingredient. I served with Healthy Fast and Easy Minted Sugar Snap Peas. Made for ZWT4 and planning to make again!

The sauce is so good on the salmon. DH didn't want to try it. When I gave him a piece of salmon with the sauce, he was kind of mad. But finally he loved it LOL I didn't use salt. Thanks Jackie. Made for the Babes of ZWT4

Very delicious, especially the sauce, lovely to look at, and quick to prepare. The distinct flavors of shallot, mustard, and dill each enhance the salmon.

This is an extraordinary, restaurant-quality dish. By all means, serve this one to someone you want to impress. I heard a resounding chorus of "oooohhhh" when I brought this to the table. The sauce is fantastic — consider making more, and serve some good crusty bread with dinner so you can mop up that sauce. Made for the Canadian portion of ZWT4. Thanks, JackieOhNo!
