This is a yummy salad that is quick and easy. Great to take to a BBQ!

Ingredients

  • 1 (20 ounce) package cheese tortellini
  • 1 cup reduced-fat sour cream
  • 1 cup light mayonnaise
  • 1 (1 ounce) package dry ranch dressing mix
  • 2 cups cooked chicken
  • 1 (12 ounce) jar roasted red pepper, drained and sliced
  • 6 scallion, thinly sliced
  • 1/4 cup chopped fresh basil

    • Directions

      Cook the tortellini according to the package directions; drain, rinse with cold water, drain again.
    2. 2
      In a large bowl, combine the sour cream, mayonnaise, and ranch dressing mix; mix well.

      Add the tortellini, chicken, roasted peppers, scallions, and basil; toss until well combined.

      Cover and chill until ready to serve (takes about 2 hours to chill).
