Mexican Minestrone

Easy slow cooker recipe. I'm sure you could add meat to this but we have never tried that.

Ingredients

  • 2 (15 ounce) cans black beans, rinsed and drained
  • 2 (14 1/2 ounce) cans Mexican-style tomatoes, undrained
  • 1 (14 1/2 ounce) can chicken broth
  • 1 (12 ounce) can whole kernel corn, undrained
  • medium red potato, cut into 1/2 inch pieces
  • cup salsa
  • cup cut up green beans
  • Directions

      Mix all ingredients in slow cooker.

      Cover and cook on low heat 6 to 8 hours or until vegetables are tender.
