Broccoli Cheese Soup

This is an adapted TOH recipe that DH and I like. I have not included the par-boiling time for the carrots,celery, and broccoli florets.

SERVES 6 -8 (change servings and units)

Ingredients

    In a large saucepan, melt butter and saute onion and use some garlic if you want.

    Add flour and stir to make smooth paste.
  3. 3
    Gradually add chicken broth and milk.
  4. 4
    Cook until mixture thickens, about 9 minutes.

    Add carrots, celery, and broccoli; heat through.
  6. 6
    Add red pepper flakes.
  7. 7
    Add cheese; heat until cheese is melted and vegetables are tender.
