Cool and Easy Strawberry Pie

This pie has fresh fruit and a fluffy texture — good for a snack or dessert, especially on a hot summer day when you want something light. (Cooking time is refrigeration time for pie to firm.)

    Stir boiling water into dry gelatin mix in large bowl at least 2 minutes until completely dissolved. Add enough ice to cold water to measure 1 cup. Add to gelatin; stir until slightly thickened. Remove any unmelted ice.

    Add whipped topping; stir with wire whisk until well-blended. Stir in chopped strawberries. Refrigerate 20-30 minutes or until mixture is very thick and will mound. Spoon into crust.

    Refrigerate 6 hours or overnight until firm. Top with sliced strawberries. Store in refrigerator.

This is very tasty! While I was eating the filling - I was thinking...this would be good with orange jello and mandarin oranges, raspberry jello and raspberries - just to name a few possibilities! I accidently left the pie in the freezer instead of the refrigerator overnight. The family is eating it though. I love the light texture and how easy it was to make! This took me a couple days as I was waiting for my strawberries to get ripe enough. I had enough ripe ones for the filling the first day and then enough ripe ones for the top today. Made for the July 2008 NZ/Aussie recipe swap. We will be making this again - and with various combinations!

    Yummy, made this for company, wanted something easy that also had that taste of Spring and this fit the bill. So easy to make and turned out so pretty, everyone thought I'd really worked hard. Had some left over filling so put those in dessert cups, topped w/more cream and a fresh strawberry and had another dessert the next day. Thanks for a very nice, dessert recipe.
