Mom's Clam Chowder

This chowder always disappears. It disappeared when my mom made it, and it's a hit now with my family too!

SERVES 4 -6 (change servings and units)

Ingredients

Directions

    Cook potato in 2 cups water with pinch of salt until tender, but do not drain.
  2. 2
    In a small pan, saute onion in butter until tender; add flour, cayenne, and celery seed; stir well.
  3. 3
    Drain juice from clams into potatoes and reserve clams for later.
  4. 4
    Add parsley and milk to potatoes, and stir well.
  5. 5
    Heat potato mixture, and add onion/flour mixture, stirring constantly until thickened slightly.

    Stir in clams; and season to taste with salt and pepper.
  7. 7
    Cook for 5-10 minutes more or until heated through.
  8. 8
    Serve.

This is a fabulous clam chowder. The only thing I did differently was I added 2 cans of cream of celery soup. Everything else I did just as the recipe instructed. I was struck by how wonderfully creamy the chowder is. My husband, who is very picky when it comes to his clam chowder, said it was the best he has ever tasted. Thanks so much.

    What a filling and flavorful chowder! My brother went clamming this morning and came back with a heaping amount of razor clams. This was easy to prepare, and worked out well since we didn't have to go the extra step with bacon which tends to typically be on the ingredient list. We tripled the recipe (large family, I know), and increased the flour by 3-4 tablespoons to make it extra thick.

    Sue L, my dear, this is just divine. WOW!! It disappeared at my house too. Creamy and buttery. I liked the use of cayenne for some spiciness. Comfort food extraordinaire. Thanks. I look forward to making this all winter long ;D
