Light and a bit sweet from the seasoned rice vinegar. From Bon Appetit April 1998.

    Whisk shallots, rice vinegar and Dijon mustard in small bowl to blend. Gradually whisk in oil. Season dressing to taste with salt and pepper.

This was FANTASTIC! I couldn't believe how easy it was to put together and how much flavor it delivered. I make a vinaigrette that is fairly similar, but is a little more complicated with several more ingredients. I found that this combination was really all I needed. The Nutrition Facts listed with this recipe really don't do this justice - this is really a healthy vinaigrette as this made enough dressing to generously cover 6 side salads for us (which would be around 57 cal/4.5g of fat per serving according to the calculations - not bad!) I think this would also be wonderful over some fresh steamed veggies as well. If you are a shallot lover or if you like the flavor of rice wine vinegar, you should give this a try - it's delicious! Thanks cookiedog for sharing!
