Sweet Potato Burritos

A little bit off the beaten path, but so delicious one won't be enough. Originally from an AllRecipes cookbook, but I tweaked the ingredients a little and a couple of the prep stages to make it easier. The sweet potato blends beautifully with the spices and black beans!

SERVES 12 (change servings and units)

Ingredients

Directions

    Preheat oven to 350°F.
  2. 2
    Heat oil in skillet and saute onion and garlic until soft. Mix in beans.
  3. 3
    Add in water and heat til warm. Remove from heat.
  4. 4
    Add in chili powder, cumin, mustard, cayenne pepper, and soy sauce.
  5. 5
    Divide bean mixture and mashed sweet potatoes evenly between the tortillas. Top with cheese. Fold up burrito style.

    Place on baking sheet (lightly sprayed) and bake for 12-15 minutes.

    Enjoy!

    May be made ahead, individually frozen, then cooked as instructed.

I did take a few liberties with this recipe ~ First of all I cut it in half, then cut the cumin in half again, used just 1 tablespoon of chili powder, & opted out of the cayenne! When I prepared the yams, I didn't peel them, & when cooked diced them small before mashing! I was prepared to make 6 burritos, but after fixing 4 of them very full, there was only a little bit of filling left! GREAT TASTING BURRITOS, & a wonderful new way to fix yams!     Very unusual and really pretty good! The sweet potato did not taste sweet in this, it was just a rich and smooth complement to the spicy beans. I cut the recipe back to make 2 small burritos and enjoyed them for a nice filling lunch - thanks for sharing the recipe! Made for Fall PAC 2008
