    Combine dressing ingredients in a bowl and whip to combine. Pit, peel and slice avocado. Dice tomato. Combine salad ingredients and top with dressing.

We made this for a family get-together this afternoon, minus the dressing and having slices of tomato on top. Excellent flavors! (I don't like tomatoes so it was easier to slice them and put it on top)
