Crock Pot Sprouted Grain Bread

Recipe #291705 | 3½ days | 3 days prep | add private note

By: Chef Romie
Mar 13, 2008

I haven't made this yet but I'm working on sprouting my wheat berries in preparation. I can't wait to try it!

SERVES 4 (change servings and units)

Ingredients

Directions

  1. 1
Plan 3 days in advance. Soak wheat berries for 8 hours or overnight. Then rinse and drain them 3 times a day for the next 32 hours or until they've sprouted 1/4 inch tails. Don't rinse after they are finished sprouting.
  2. 2
Pulse sprouts in food processor until the dough forms a ball on the blade.
  3. 3
Shape into a ball. You may sprinkle with cornmeal.
  4. 4
Place dough in small pyrex-type bowl that will fit in your crockpot.
  5. 5
Cover and turn on crockpot to low. Cook approx 8 hours or until a rich, dark brown.
  6. 6
Stays fresh in refrigerator for about 1 week.

I have made sprouted grain bread, and once tried a recipe like this (although with slightly different crock pot cooking directions) . it is not what you expect it to be, and I would recommend looking for a sprouted grain bread recipe that calls for some yeast, honey, salt...other ingredients that will give it more flavor. Using just wheat berries makes it incredibly rich, very dry, and it is "bread" in the loosest sense. If you're expecting something to make sandwiches out of, this is NOT it -I've resorted to buying Ezekial Bread, but am still looking for a good homemade recipe.
