Easy Apricot Squash Soup

Very simple and quick to put together, this is a nice, thick soup with warming wintry flavor, though of course it can be enjoyed year round.

Ingredients

  • cups butternut squash, cooked and pureed (it's pre-packaged and frozen at the grocery store)
  • cup apricot nectar
  • tablespoon half-and-half
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 1/8 teaspoon ginger
  • pepper
  • Directions

      blend everything and simmer until warm or begins bubbling.
