I got given a large lot of tomatoes from a grower so used some to make this, this is a lovely sweet chutney that goes great on sandwiches or alongside some roast beef or lamb and if stored correctly will apparently keep for up to 1 year.

3 cups (change servings and units)

Ingredients

Directions

  1. 1
    Slowly bring all ingredients to the boil in a large saucepan, stir until sugar dissolves, reduce heat.
  2. 2
    Simmer, covered for approx 2 hours or until mixture is thick, stirring occasionally.
  3. 3
    Allow to stand for 5 mins before spooning into sterilised jars. Seal immediately.

    When cool, label & date.

What I ended up with was quite good, but I had no idea what mixed spices to use...so I winged it with some other chutney recipes. I made one cup because I don't can, but I'm sure it will be gone before the week is over! Yummy!

    Made this specifically to use in Mandy's Chicken & Cashew Stir-Fry, but since I also enjoy chutney, I just had to try this one out! DEFINITELY A KEEPER, & the next time I have a sandwich bar, this will be on it! Enjoyed the combo of tomato, apple & pear here!
